Reheat from frozen

The benefits of a cook/freeze system

As any chef will tell you, a meal is at its freshest the moment it has been prepared. That's when we freeze it.

As soon as we prepare a meal, we freeze it, locking in taste and nutrition. If it stays in the freezer right up until the moment you need it, the majority of the nutritional values are retained to benefit of the consumer.

Food safety is enhanced by reheating directly from frozen too, so a cook/freeze meal program offers an efficient and safe process.

Wastage is reduced too. If you have an extra portions, they stay right in the freezer until next time. If they have been tempered, they would either have to be used or discarded.

There are many other benefits to reheating from frozen:

  1. Less temperature sensitive than cook/chill
  2. Easier to handle
  3. Simplified process
  4. Potential savings
  5. Longer product shelf-life
  6. Reduced wastage
  7. Consistent quality

Today's modern rethermalisation carts are very capable of reheating food directly from frozen in around 60 minutes. In our own tests using a Burlodge Multigen, the whole meal - soup, entrée, vegetables and gravy - was heated from frozen and was perfectly heated ready to serve. The process is easy to manage as their is no need to plan ahead and move things from the freezer to the tempering room, in fact the food can stay in the freezer until about an hour before serving.

With added food safety benefits, the simplicity and quality of cook/freeze means peace of mind.

Here are some further benefits:

  • Simplify the process - keep food in the freezer until it's needed
  • Reduce waste - unwanted food stays frozen until next time
  • Plan for today - no need to plan ahead to thaw requirements
  • Reduce space and energy requirements for a tempering room
  • Improve food safety by eliminating the potential risk that bacteria may grow during chilled storage
  • Take the safer option - temperature rises from - 18°C to +74°C in a short time interval which does not allow microbial growth
